Why This Roast Turkey Breast is Perfect for Thanksgiving
Easy Holiday Cooking
Cooking a whole turkey can feel intimidating, especially if you're hosting for the first time or feeding a smaller group. This recipe simplifies everything. No brining. No basting. Just tender turkey, flavorful seasoning, and a sauce that steals the show.
Flavorful and Moist
By searing the turkey first and then roasting it in a bath of homemade cranberry sauce, you lock in juices and create a rich, savory-sweet glaze. The result is moist meat with a golden crust and tons of flavor in every bite.
Great for Small Gatherings
This recipe is ideal if you're cooking Thanksgiving dinner for two to four people. It's manageable, budget-friendly, and doesn’t leave you drowning in leftovers.
Ingredients and Substitutes
What You’ll Need
- 3 cups cranberries (fresh or frozen)
- 1 cup orange juice
- 1 cup apple jelly
- ½ teaspoon five spice powder
- 3 tablespoons cornstarch
- 4 pounds turkey breast (skin-on)
- 1 tablespoon fresh rosemary, chopped
- ½ teaspoon dried thyme
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 4 tablespoons unsalted butter
- 2 medium onions, chopped
Substitution Ideas
- No apple jelly? Try apricot preserves or cranberry jam.
- No five spice? Use a pinch of cinnamon and ground cloves.
- No fresh rosemary? Dried rosemary works, though fresh gives better aroma.
- Need dairy-free? Swap butter for olive oil.
Step-by-Step Instructions

1. Prepare the Cranberry Sauce
In a food processor, blend 2 cups cranberries with orange juice, apple jelly, five spice, and cornstarch. Pulse until smooth. Set aside.
No food processor? Just mix everything in a saucepan and cook over medium heat for 5 minutes until the cranberries soften.
2. Season and Brown the Turkey
Pat the turkey breast dry and season all over with rosemary, thyme, salt, and pepper. Melt 2 tablespoons of butter in a skillet over medium-high heat. Sear the turkey on both sides until golden brown. Transfer to a roasting pan or Dutch oven.
3. Sauté the Onions
In the same skillet, melt the remaining 2 tablespoons of butter. Add the chopped onions and cook until soft and slightly browned, about 5 minutes. Season with a pinch of salt and pepper.
4. Add the Sauce
Pour the blended cranberry mixture into the skillet with the onions. Bring to a boil, then remove from heat. Stir in the remaining 1 cup of whole cranberries. Pour this sauce around the turkey in the roasting pan.
5. Roast the Turkey
Place the roasting pan in a 375°F oven. Bake for 1.5 hours, or until the turkey reaches an internal temperature of 165°F. Let it rest under foil for 15 minutes before slicing.

Description
This Roast Turkey Breast with Saucy Cranberry Sauce is your answer to a stress free holiday and a great alternative to cooking a whole turkey.
Ingredients
- 3 cups cranberries (fresh or frozen)
- 1 cup orange juice
- 1 cup apple jelly
- ½ teaspoon five spice
- 3 tablespoons cornstarch
- 4 pound turkey breast (with skin)
- 1 tablespoon fresh rosemary (chopped)
- ½ teaspoon dried thyme
- ½ teaspoon salt (or to taste)
- ¼ teaspoon pepper (or to taste)
- 4 tablespoons butter (unsalted)
- 2 medium onions (chopped)
Instructions
- Preheat oven to 375℉.
- In a food processor add 2 cups of the cranberries, orange juice, apple jelly, five spice and cornstarch. Pulse a few times until smooth. Set aside.
- Season the turkey breast with the rosemary, thyme, salt and pepper generously.
- In a large skillet melt 2 tablespoon of the butter. Add the turkey breast and brown on both sides until golden. Place the turkey in a roasting pan that’s big enough for the breast.
- In the same skillet melt the remaining 2 tablespoon of the butter. Add the onion and cook for about 5 minutes until it starts to brown and becomes soft and translucent. Season the onion with salt and pepper.
- Add the cranberry mixture to the skillet and bring to a boil, stirring occasionally. Remove from heat and stir in the remaining 1 cup of cranberries.
- Pour the cranberry sauce around the turkey breast. You can pour over the turkey breast too, but I like the turkey breasts to be nice and golden when done.
- Place the roasting pan in the oven and bake for about 1 ½ hours or until the internal temperature of the turkey breast is at 165℉.
- Remove the roasting pan from the oven, cover with aluminum foil and let it rest for 15 minutes before slicing the turkey.
- Serve with sweet potato casserole, green bean casserole, mashed potatoes or roasted potatoes.
Notes
Crockpot Alternative: Follow all the steps up to and including step 6, but instead of placing the turkey in a roasting pan, place it in a slow cooker and pour the sauce around it. Cover and cook on low for 4 hours. Check the internal temperature and make sure it’s at 165℉, otherwise cook it longer.
