Description

Freezer Chicken Fajitas are the ultimate prep-ahead dinner! Juicy chicken, colorful peppers, and bold taco seasoning come together in one easy freezer bag meal. Just thaw, bake, and serve with your favorite toppings. It's the weeknight win you'll keep coming back to!


Ingredients

  • ¼ cup taco seasoning

  • 1 tablespoon olive oil

  • 2 tablespoons fresh lime juice (about 1 lime)

  • 2 pounds boneless skinless chicken breasts, thinly sliced

  • 1 red bell pepper, thinly sliced

  • 1 yellow bell pepper, thinly sliced

  • 1 green bell pepper, thinly sliced

  • 12 (6-inch) flour or corn tortillas, warmed

  • Sliced avocado, for serving

  • Fresh cilantro, for serving

  • Salsa or hot sauce, for serving

  • Sour cream, for serving


Instructions

  • In a large zip-top freezer bag, mix the taco seasoning, olive oil, and lime juice.

  • Add the chicken and sliced bell peppers to the bag. Seal and shake to coat everything evenly.

  • Press out as much air as possible, label the bag with the date, and freeze flat for up to 9 months.

  • When ready to cook, thaw overnight in the refrigerator.

  • Preheat oven to 400°F and line a rimmed baking sheet.

  • Spread the thawed fajita mixture in a single layer on the sheet.

  • Bake for 15 minutes, or until the chicken is fully cooked and the peppers are tender.

  • For a charred finish, broil on HIGH for 3–5 minutes.

 

  • Serve with warm tortillas and toppings of your choice!


Notes

  • Want it spicier? Add a pinch of cayenne or sliced jalapeños.

  • Prefer dark meat? Chicken thighs work great too!
