Description

Creamy Brussels sprouts smothered in a rich, soul-satisfying cheese sauce that takes this overlooked veggie over the top. Delicious and nutritious Brussels sprouts paired with a decadent sauce will have your family and guests singing your praises.


Ingredients

  • pound (685g) Brussels sprouts, trimmed and halved
  • 2-3 tablespoons (30-40g) unsalted butter
  • 1 tablespoon garlic, minced (3-4 cloves)
  • 2 teaspoons flour
  • ½ medium onion
  • 2 teaspoons Italian seasoning (or Creole seasoning)
  • 1 cup chicken broth (or vegetable broth)
  • 1 cup heavy cream
  • ½-¾ cup parmesan cheese, freshly grated and divided


Instructions

  1. Preheat the oven to 400°F/200°C.
  2. Heat a large skillet over medium-high. Once hot, add a tablespoon of butter and then the Brussels sprouts. Season with salt.
  3. Cook for 3-4 minutes until brown, turning once. Sprinkle Italian or Creole seasoning over them, and continue cooking for 1-2 minutes. Remove and set aside.
  4. Add the remaining butter, onions, and garlic to the same skillet. Saute for 1-2 minutes until onion wilts.
  5. Stir in the flour, followed by the broth and cream. Bring to a boil and simmer until slightly thickened.
  6. Remove from heat, add about ½ of the parmesan cheese, and stir until the cheese completely melts.
  7. Adjust seasoning with salt, pepper, and extra seasonings if desired.
  8. Scatter the Brussels sprouts evenly into the sauce if there's room. Top with the remaining cheese.
  9. Transfer to the oven and bake for 10-12 minutes or until bubbling.
  10. Remove and serve warm.


Notes

If using frozen Brussels sprouts, add them while frozen. Roasting beforehand adds a delicious smoky flavor. Squeeze a little lemon juice before serving for extra zing.
